Wholesome and easy
Ingredients for one cake (10 breakfasts);
- 10 bananas
- 500 gram rolled oats
- 6 tbsp flaxseed
- 1 cup compote/apple sauce (or two finely grated apples)
- 6 tbsp shredded coconut
- 3/4 cup of raisins (or other dried fruit)
- Cinammon, cardamon, vanilla
- Fruit for on top, cut in large chunks
This recipe is good for all the busy bees, who like a healthy start but lack time or energy to prepare something wholesome in the morning. You can make up to ten breakfasts in one go and refrigerate (or even freeze) to last throughout the week or longer. We used rhubarb for the cake that is pictured here, because it is spring and it is only available in The Netherlands during these brief couple of months. But you can use any fruit that you like- whichever fits your mood and the season (e.g. raspberries, apples, pears, quinces, plums, apricots, peaches etc).
Preheat the oven to 180 degrees Celsius. Mash the bananas with a fork or in a food processor. Combine all the ingredients except the fruit chunks in a large mixing bowl. Let the mixture stand for about 10 minutes. In the meantime put a piece of parchment paper on a baking sheet. The mixture should be quite thick but moist. Spoon the mixture onto the baking sheet and press in the fruit chunks. Bake for 45 minutes or until firm. Let the cake cool completely before cutting. The cake is delicious both at room temperature and warmed up.
