Like drinking a warm sweet fog

 

The dark days are coming back in The Netherlands and I actually enjoy these months equally to the Summer. Each day grows shorter in daylight and the air is colder. It is a time for being more at home, lighting candles, getting cozy and for some introspection. A time to recharge energies, review our path, and focus on things you normally may not take the time for.

We enjoy eating breakfast with a candle on these days, and the windows are no longer open. Instead of the usual morning coffee, we come up with new hot drinks to keep the morning interesting. There is something so pleasant and meditative in savoring your hot drink one sip at a time. Tasting its flavor and feeling the warmth in your hands and in your body.

I heard this drink is called a ‘London Fog’ because the steamed milk reminds of fog. Earl grey tea of course is an English classic.

  • 2 tsp of earl grey tea (or 2 tea bags)
  • ½ cup of water
  • 1/2 cup plant-based milk
  • A pinch of vanilla powder
  • ½ tbsp of coconut palm sugar (optional)
  • Some dried cornflower petals for decoration (optional)

To brew the tea, steep the tea for five minutes in a half cup of hot water. Make the tea a bit stronger than you usually would drink. Then strain the tea leaves out or remove the tea bags (if using).

While you’re waiting for the tea to steep, set a small saucepan of milk on the stove over medium heat. Whisk the milk for about five minutes, until it’s hot and frothy. Or use a milk frother. Once the milk is hot and frothy, add it to the brewed tea.

Add the vanilla and coconut palm sugar (if using) to your latte and put some cornflower petals on top for decoration.
