A sweet little present

With the end of the year approaching, many gift suggestions are floating around. I thought to start a short series of gifts that you can make yourself. Because what speaks of more love and care, than a present made by your own hands? Even if it may not look perfect, the fact that you spent time, thought and effort into a present just makes it all the more sweeter. And if the present happens to be caramels, it is definitely very sweet (and still good for you) indeed!

For about 40 caramels;

  • 2 cups of dates
  • 1 cup of water
  • 1 Tbsp of peanut butter
  • 1 Tbsp of tahini
  • 2 tsp of sea salt
  • ¬Ĺ tsp of vanilla
  • 1 cup of coconut flour

Blend all the ingredients except for the coconut flour in a food processor, until a smooth paste forms. If your dates are dry you might have to add a bit more water. Once your paste is smooth with no big date chunks, add the coconut flour and blend a little longer until a dough ball forms. The dough should be thick and shapeable; you can always add a bit more coconut flour if it is not dry enough.

Put the caramel dough into a dish, spread it out and freeze it for about an hour. Then slice it into candy sized squares. You can either gift them wrapped like this, or wrap each candy individually in a piece of parchment paper. Or you can also just eat them yourself ;).

Cooled they will keep for at least a week. In the freezer they will keep for months and I actually find them tastier (chewier) straight out of the freezer.
